Strawberry Shortbread Sundae

Makes 3-4 sundaes

Ingredients:

  • Two handfuls of chopped strawberries
  • One handful of chopped raspberries 1 tbsp caster sugar 
  • One litre tub of Marshfield Strawberries in Clotted Cream Ice Cream Double cream, whipped 
  • 4 pieces of shortbread


Method: 

Place one handful of chopped strawberries and the chopped raspberries into a pan with the sugar. Simmer for five minutes over a low heat until the fruit softens. Keep stirring so it doesn’t catch. Strain your sauce through a fine sieve, pressing down firmly with the back of a spoon. To assemble your sundaes put your remaining strawberries in the base followed by some berry sauce, a couple of scoops of ice cream, a dollop of whipped cream. Top with a little more sauce, a strawberry piece and a shortbread piece.
